Simple Spring Salad Dressings
Spring has arrived and the onset of the warmer season means time for beautiful fresh salads again! Salads are delicious in and of themselves, but often, if you have a good salad dressing it really makes the salad.
Dressings are easy and quick and can be mixed or blended together in larger batches that will keep in your fridge for up to a week, meaning you always have a healthy dressing ready to spruce up any meal!
Here are a couple below using nut or seed bases with plenty of spices, fresh herbs and flavor. They are perfect on top of any salad, on baked sweet potatoes, or on top of grilled, roasted or steamed vegetables.
Cashew Turmeric Dressing
- 1 inch piece fresh turmeric
- 2 inch piece fresh ginger
- ½ teaspoon curry powder
- 2 tablespoons tahini
- 1 teaspoon white miso
- 2 tablespoons lemon juice
- 1 teaspoon tamari
- 3 tablespoons macadamia or olive oil
- 1 teaspoon raw honey or coconut nectar
- ¾ cup of water
Place all ingredients in your blender and blend until smooth. Add more water to get desired consistency. Store in a jar in the fridge for 3 to 4 days.
Tahini Orange Dressing
- 1/2 cup tahini
- 2 teaspoons miso
- 1 teaspoons honey or coconut nectar
- 1 tablespoon of tamari
- 1 tablespoon flaxseed or olive oil
- 3 tablespoons of orange juice
- 2 tablespoons apple cider vinegar
- Salt and pepper to season
- 1/4 cup of water
Place all ingredients in your blender and blend until smooth. Add more water to get desired consistency. Store in a jar in the fridge for 3 to 4 days.
Green Superfood Salad Dressing
- ½ a ripe avocado
- ½ cup of fresh basil leaves
- ½ cup of fresh coriander leaves
- 1 tablespoon of flaxseed oil
- ½ teaspoon of spirulina (optional)
- ½ teaspoon of salt
- 2 tablespoons of lemon juice
- 1/8 teaspoon of chili flakes or cayenne pepper
- 1 tablespoon of nutritional yeast
- ½ teaspoon of honey
- 3/4 cup water
Place all ingredients in your blender and blend until smooth. Add more water to get desired consistency. Store in a jar in the fridge for 3 to 4 days.
